In addition to the local culinary talents, consisting of all 5 haubern and many other top Austrian chefs, the Gault&Millau Genuss-Messe also welcomes international guests, including award-winning Japanese chef Keiko Kuwakino.
Inspirations from Ayurvedic cooking
As a trained therapist, Keiko Kuwakino has long been involved with the traditional Indian healing art of Ayurveda and Ayurvedic cooking. Inspired by this healing cuisine, she has been the chef of Satoyama Jujo restaurant in Minami-Uonuma since 2018. Located on the Japanese island of Honshū, the restaurant was awarded three toques in 2021 and a Michelin star in 2020. The restaurant as well as Kuwakino’s culinary art focuses on dishes with local ingredients as well as exclusively natural flavours.
Kuwakino at the Gault&Millau Gourmet Fair
Kuwakino is not only ranked among the top 100 chefs in Japan by the Hitosara gastronomic platform, but also received the Gault&Millau Japan Terroir Trophy in 2022. With her ‘all-natural Japanese cooking’, she is now adding to the gastronomic fair on Sunday 18 September. Between 4 and 6 p.m., you can watch over the shoulder of the great chef during the live cooking in the Kursalon Hübner and get an idea of the Japanese aroma during the tasting. The Gault&Millau team is delighted with the first-class international programme.
